All dishes are made with fresh ingredients: the vegetables come from the market, the meat from Metzger, the fish from Pomona and the other ingredients from the L'Ours Vert association run by Jean-Philippe. A cuisine that respects the purest Japanese tradition, without adapting to the French style!
